Actual alcoholic strength: 15% vol
Grape variety: Corvina, Corvinone, Rondinella.
Vineyard and production area: Western Valpolicella area, on soils of morainic origin and basaltic soils.
Training system: Veronese pergola and row training with Guyot pruning. Manual grape harvesting.
Vinification and refinement: Three-month drying process in the drying room (fruttaio), followed by vinification in stainless steel tanks at controlled temperatures. In oak barrels, with a subsequent six-month refinement in bottle.
The tasting:
Color: Intense red with garnet hues.
Bouquet: Notes of dried fruit, spices, and tobacco. Aromas of preserved fruit, black cherry, cherry, and vanilla.
Taste: Intense, full-bodied, and well-structured on the palate, with a long finish.
Food pairings: Excellent with red meats and game, perfect with aged cheeses and those with bold flavors.
Serving temperature: 18/20 °C
